Crispy Baked Drumsticks

I love Fried Chicken! Who Doesn’t? Lets face it fried chicken is soo delicious but unfortunately for me and the rest of the world it is soo horrible for you… So I came up with a solution…  Baked “not fried” Drumsticks AKA Chicken Legs.. You can not even tell they aren’t fried with a few little tricks and believe me it took a while to get this one right… You will need a pan with a rack for this… I use a cookie sheet with two baking racks on it…



15 Drumsticks (I bought a club pack)

1 egg

1/4 cup of cornstarch

1/8 of a cup Quick Oats

1/2 cup Flour  (I used all purpose)

1 tbsp pepper

1 tbsp sea salt

Non-stick cooking spray



1) Pre-heat oven to 375 degrees. Next put baking racks on cookie sheet, and spray with non-stick cooking spray

1) In a gallon size storage bag add cornstarch, quick oats, flour, pepper and sea salt… then zip the bag and shake it to mix it all well

2) Crack raw egg into a bowl and mix with a fork to use for coating the drumsticks… Coat the drum sticks 4-5 at a time put them in the storage bag with your mix and shake them until they are covered

3) Put the coated Drumsticks on the racks and then repeat this process with the remaining drumsticks until they are all coated on the rack

4) Bake drumsticks on 375 degrees for 60 minutes then turn oven up to 400 degrees and cook for 15-20 minutes more or until very crispy..


My kids, husband and I had these tonight and they were a true hit! Hope you enjoy the baked version of the unhealthy southern fried chicken we are all so used too…  Feel free to leave your feedback and questions!

Mom’s Italian Meatballs

Soo my mother and I have been on the quest to find the perfect meatball recipe for years soo after trying many different ones together we came up with this (by mixing different things from the many we tried and adding our own) and these meatballs are AMAZING! The plus side is they have some veggie mixed in!



1 Pound Ground Beef

1/2 cup chopped onion

1 cup chopped carrot (i used a food processor to make it very fine)

1 cup seasoned panko bread crumbs

2 Eggs

1/2 Cup milk

1 large size jar Prego Spaghetti sauce 45oz

1 tablespoon Italian seasoning

1 tablespoon minced garlic

1/2 teaspoon black pepper

1/2 teaspoon basil

1/2 teaspoon sea salt

2-4 tablespoons olive oil


1) In a large mixing bowl mix together Ground beef, milk, eggs, chopped onion, chopped carrot, seasoned panko bread crumbs, Italian seasoning, minced garlic,black pepper, basil and 1/2 cup of prego spaghetti sauce (set the rest of the spaghetti sauce to the side)

2) After mixing together the above ingredients, roll meat mixture into meatballs and place on a tray/plate then refrigerate the meatballs for 10 minutes (this helps the mixture stick together during the browning process) At this time preheat the oven to 350 degrees

3) In a stainless steal skillet heat olive oil to medium high heat and brown the meatballs, flipping to each side until totally brown all the way around.. Remember the actual cooking process will be done in the oven you are just browning the outside of the meatballs

4) Place browned meatballs in your baking dish and pour remaining sauce on top… They should be completely covered in sauce at this point…

5) Place baking dish in the oven and cook for 1 hour!

6) Your Meatballs are done…. You can eat them however you choose… I made my spaghetti and meatballs for my daughter and meatball subs for everyone else! Hope you enjoy them as much as we did!

Mason Jar Mixed Berry Oatmeal

My husband is Diabetic and LOVES Oatmeal for breakfast but i recently was looking over the packets of his favorite Strawberries and Cream Oatmeal and was alarmed at all the Carbs soo I decided to create my own Low Sugar Healthy Oatmeal Recipe… Turned out pretty good



Non-Fat vanilla Greek style yogurt 6oz 

1/2 Cup mixed berries

1 Tablespoon Splenda

1/2 Cup Quick Oats

4oz Low Fat Milk (or almond milk)

Pint Size Mason Jar



1) Mix all ingredients except milk together in a mixing bowl by flipping around with a spoon 

2) Put mixture in the mason jar and add your low fat milk… Almond Milk is fine in this recipe too although we do not use it in our home due to tree nut allergies 

3) Shake Jar or stir to get milk to mix through 

4) Put in the refrigerator overnight (at least 8 hours but up to 72hours)

5) Heat and enjoy!



I found this recipe to be very tasty and healthy too! My husband loved it! I have seen people that use half pint mason jars… If you only want one serving heat in a bowl and use the rest the next day or cut recipe in half! 🙂

Homemade Chicken and Brown Rice Soup!

Chicken and Brown Rice Soup

I love canned chicken noodle soup but I HATE BPA and preservatives so I decided I would make my own and just started throwing it together one day.. I have made this tons of times and I feel it has finally been perfected So here you go enjoy!


4 Boneless Skinless Chicken Breasts with fat trimmed off

1 Bag of Frozen Carrots

1 cup frozen green beans

1 medium onion chopped

1 tablespoon garlic

1 teaspoon black cracked pepper

1 teaspoon salt

1 teaspoon Italian seasoning

1/2 teaspoon parsley

3 cups Cooked Brown Rice

4 Cups of Water

1 32oz Fat Free Chicken Broth

4 teaspoons Chicken bouillon (I use Sodium free)


1) Add chicken broth, water, chicken bouillon, salt, parsley, Italian seasoning, garlic, cracked pepper, chopped onion, frozen carrots, frozen green beans  and chicken breasts to a large soup pot

2) Heat until bowling on medium to medium high heat… Once Bowling turn down to low and allow to simmer for an hour and a half or until chicken is falling apart

3) Stir the soup and use the spoon to make sure all the chicken is apart and there are no large pieces

4) Add Cooked rice and simmer for another 15 minutes to make sure rice is warm and flavored

5) Remove Soup from heat and serve with your favorite crackers or side of bread!  Serves 8-10 Depending on Bowl Size

Black Bean Veggie Burgers




I love veggie burgers and I have been trying for years to find a really good one that is both delicious and filling… Well I found these and I truly love them. Also they are cheap to make and I already had everything for them in my house so I did not even have to run out to the store for ingredients which is always a plus when you live 20 minutes away from the nearest grocery store. Anyway I hope you Enjoy these as much as I did! 


Black Bean Veggie Burgers:


4 cups of Cooked Black Beans (I cooked my beans from Dry beans but you could use 2 cans low sodium black beans)

1/2 Cup Organic Baby Carrots chopped (I used a food processor)

1 Small Onion chopped fine ( I used a food processor) 

3/4 Cup Panko Unseasoned Bread Crumbs 

Olive Oil (about 4 tablespoons)

2 Extra Large Eggs

1 Teaspoon Cumin

1 Teaspoon Dry or 1/2 teaspoon minced Garlic

1/4 Teaspoon Cayenne pepper

1/4 Teaspoon Black Pepper

1/2 Teaspoon Sea Salt 

1 tablespoon Cilantro 



1) Divide the 4 cups of cooked black beans in half. In a food processor chop 2 cups of beans and set the other 2 cups of beans aside for later

2) In a large bowl combine the chopped black beans with your eggs, bread crumbs, onions, carrots, cumin, garlic, cayenne pepper, black pepper, sea salt and cilantro and mix all together

3) Add the 2 cups of black beans that were not mashed to the mixture and stir them in. The cover the bowl and chill it in the refrigerator for about 30 minutes

4) Divide into patties… In my pictures you will see I made 6 patties but I recommend 8 because they are way to big when just 6 are made… 

5) Once patties are made slip them back in the refrigerator while you heat your skillet for about 5 minutes.

6) Once skillet is heated to Medium heat add olive oil and Cook patties over medium heat for about 5-6 minutes per side totaling around 12 minutes or until golden brown… Make sure to cook thoroughly because this mixture contains eggs

7) Serve Over a salad or on a bun with your favorite Toppings! Sure hope you enjoy these as much as I did!
